Pork tenderlion in bacon

INGREDIENTS:
- 1 pork tenderloin (approx. 450 g)
- 10-12 slices of bacon
- Salt
- Pepper
- Thyme
- Rosemary
- Coconut fat
PREPARATION:
1.) Peel the meat and cut it into 2 finger-thick slices.
2.) Flatten each meat disk a little bit and wrap it around with 1 bacon.
3.) Salt and pepper the surface of the discs where it is not covered with bacon.
4.) Preheat the oven to 160oC in the lower-upper baking mode.
4.) Heat a pan dry so that it is already smoking. Then add the coconut fat. Return to medium temperature.
5.) Insert the meat discs. Turn them over after about 3 minutes.
Then sprinkle the green spices on the coconut fat. And sprinkle the already shelled halves with the spicy coconut fat.
6.) After 3 minutes, transfer to an ovenproof dish, cover with aluminum foil and bake for 20-25 minutes at 160oC.
7.) Once done, take it out of the oven and let it rest for 3–4-minutes, while we are preparing for the serving.
