Gluten free pita bread

INGREDIENTS:
- 250 g gluten-free bread flour mixture
- 5 g of fructose
- Salt
- 7 g of gluten-free powdered yeast
- 200 ml lukewarm water
- 20 g of olive oil
PREPARATION:
1.) Mix all the ingredients and knead the dough well.
2.) Cover the bowl, place in a 50oC oven with air stirring baking mode, and leave there for 30 minutes to rise.
3.) Divide the leavened dough on an oiled surface with an oiled hand towards 4 and form cakes from them, which are placed on a baking sheet lined with parchment paper.
4.) Cover again and put back in the oven for another 15 minutes to rise.
5.) Then preheat the oven to 220oC, bottom-top baking.
6.) Bake the pizzas for 10 minutes, but turn them over at 5 minutes.
