Vegan Tofu Ratatouille

INGREDIENTS:

  • ½ red onion
  • ½ onion
  • 2 paprikas
  • 1 larger tomato
  • 1 small eggplant
  • 3 slices of smoked tofu
  • 1 turmeric
  • 100 ml of water
  • 2 teaspoon thyme
  • 2 teaspoon parsley
  • 2 teaspoon red peppers
  • 1 teaspoon coconut fat
  • Salt and pepper to taste

 

PREPARATION:

1.) Peel and chop the onions, then fry them in coconut fat.

2.) Add the spices, except the red peppers, and fry them a little too.

3.) First, we crush the tofu into it, then add the peppers and eggplant, and finally, the tomatoes and red peppers go into it.

4.) As a final step, add the water and let simmer until the flavours come together.
