Vegan Stew With Vegetables
INGREDIENTS:
- 1.5 packs of tofu (I used smoked)
- 3-4 tomatoes
- 2 paprika
- 2 strands spring onions
- 1 pinch of salt
- 1 pinch pepper
- 1 teaspoon ground red pepper
- 1.5-2 dl of water
- 1 pack of shimeji mushrooms (can be other varieties)
PREPARATION:
1.) Wash and chop the vegetables. If you have other vegetables at home, you can also add them.
2.) Dice the tofu.
3.) First, fry the onions a little, then add the peppers, tomatoes, and mushrooms.
4.) Meanwhile, fry the tofu cubes in a little oil.
5.) Salt the vegetables and add pepper and sprinkle with red pepper.
6.) Add the water.
7.) Add the toasted tofu, bring to a boil and serve with bulgur or rice.
