Paleo Potato Croquette

INGREDIENTS:

  • Fried sweet potato cubes (2 medium potatoes)
  • 4 teaspoons salt
  • 1 small carrot
  • 1 onion
  • ¼ celery
  • 2-3 roses of broccoli
  • 3 brussels sprouts
  • ½ bell pepper
  • Coconut fat
  • 3 teaspoons gyros spice mixture

 

PREPARATION:

1.) Crush thoroughly the baked sweet potato cubes by hand or fork.

2.) Add season with 1 teaspoon of salt and mix it.

3.) Stir the chopped vegetables on a little coconut fat.

4.) Season it with salt and gyros spice mixture.

5.) Put a portion of the sweet potato mass into our palm.

6.) Flat the potato mass and place in the middle a teaspoon of steamed vegetables.

7.) Fold it so that the sweet potatoes wrap the vegetables. It can also be formatted to cube format or flat discs.

8.) Fry all sides of the croquette on a little coconut fat until become red.
