Vegan Scrambled Tofu

INGREDIENTS:

  • 1 block of hard tofu (natural or smoked) -crumbled
  • 1 small onion - chopped into small pieces
  • 1-2 cloves of garlic chopped
  • ½ bell peppers or sweet pepper - chopped into small pieces
  • Olive oil
  • Salt, pepper, cayenne pepper
  • 1-2 pinches of black salt (this will give a similar taste as the original scrambled eggs);
  • ½ teaspoon turmeric;
  • 2-3 tablespoons brewer's yeast flakes (optional but highly recommended)

 

PREPARATION:

1.) In a pan over low heat, sauté the chopped onion for 8-10 minutes, after 3-4 minutes add the garlic and chopped peppers. If a mushroom is used, put it in with the peppers.

2.) Here you can add the other vegetables (optional) - except the greens because we add it at the end - and fry them for a few minutes.

3.) Add the crumbled tofu, the spices (except the black salt), and if it is needed, we can add a little water to make it juicier.

4.) Cook over medium heat for 5 minutes

5.) Add the brewer's yeast flakes for the last 1-2 minutes.

6.) Serve warm. Add the black salt only when serving, because the taste evaporates when it is heated.
