Spring Fresh Asparagus With Cheese Sauce

INGREDIENTS:

  • 1 kg of green asparagus
  • Salt
  • 120 g grated cheese
  • 2 tablespoons olive oil
  • 2 tablespoons oatmeal flour
  • 2 dl of water
  • 200 ml cooking cream
  • Salt
  • Ground black pepper
  • Ground nutmeg

 

PREPARATION:

1.) Heat the olive oil in a pan and add the oatmeal. Stir and fry for a few minutes. Pour over the water and stir to avoid lumps.

2.) Add the cooking cream and season with salt, pepper, and nutmeg. Stir and add the cheese as well. Cook for a few minutes, then set aside.

3.)  Put the cleaned asparagus in boiling salted water and cook until becomes crispy. This is approx. 5-7 minutes. (about 10 minutes for white).

4.) Take it out with a filter spoon and serve immediately, poured with cheese sauce and sprinkled with a little grated cheese.
