Smoked Salmon Roll With Mascarpone Cream

INGREDIENTS:
- 25 dkg of smoked, sliced salmon
- 25 dkg mascarpone
- 1 dl whipped cream
- 3 tablespoon vodka
- Salt
- Coloured pepper
- Chives
- Lemon juice
- 10 dkg smoked salmon in the cream
PREPARATION:
1.) Mix the mascarpone until becomes smooth and add the salt and coloured pepper.
2.) Add the vodka, lemon juice, the chopped chives, the smoked salmon diced and mix thoroughly.
3.) Whip the whipped cream into a hard foam, then mix it gently with the mass with a spoon with large movements. (Be careful not to make the mass too soft!)
4.) Put it in the fridge for 1-2 hours to allow the cream to freeze a bit.
5.) Spread a piece of foil on the table and then place a slice of smoked salmon on top. Spoon the spicy-mascarpone cream on it, then roll it up with the foil and shape it. Do the same for each salmon slice.
6.) Place the rolls on a tray and put them to rest in the refrigerator for 1-2 hours.
7.) Before serving, remove from the refrigerator and slice with a sharp knife. Serve with toasted croissant rings.
