Black Rice With Shrimp and Vegetables
INGREDIENTS:
- 50 g black rice
- 1 tablespoon olive oil (approx. 12g)
- 2 springs spring-onions (approx. 20g)
- 1 medium carrot (approx. 40g)
- 1 medium parsley root (approx. 70g)
- 110 g of frozen shrimp
- 1 teaspoon soy sauce (approx. 5g)
PREPARATION:
1.) Cook the black rice in plenty of salty water.
2.) Meanwhile, chop the carrot and parsley root into long, thin strips and then throw in the thinly sliced spring onion and garlic in hot oil. You can also add frozen shrimp immediately.
3.) Fry over high heat, stirring constantly, add a little water as needed to soften the vegetables.
4.) When the shrimp and vegetables are almost fried, add the soy sauce and the cooked, filtered black rice.
5.) It can be served sprinkled with sesame seeds or fresh coriander and/or fresh lemon juice.
