Gluten free apple-cinnamon-oatmeal muffins
Time: 50 minutes
INGREDIENTS:
- 240 g universal gluten-free flour mixture
- 165 g erythritol (to taste)
- 165 g of gluten-free oatmeal
- ½ cs baking powder (6g)
- 2 L-size hen eggs
- Melted 120 g of coconut fat
- 200 ml of coconut milk
- 6 g of vanilla aroma
- Pinch of salt
- Cinnamon to taste
- 2 larger apples (approx. 245 g)
- Coconut grease to lubricate the muffin form
PREPARATION:
1.) Preheat the oven to 180 degrees in bottom-top baking mode.
2.) In a larger bowl, mix the dry ingredients: flour, oatmeal, salt, baking powder, cinnamon.
3.) Peel the apples and cut out the seed coat. Mash one in a cutter while dicing the other.
4.) In another bowl, mix the liquid ingredients: egg, coconut fat, milk, apple puree, and vanilla flavor.
5.) Mix the liquid and dry ingredients and work the mass well. Stir in the apple pieces.
6.) Grease the muffin tin with a little melted coconut fat and add the dough.
7.) Bake them ready for approx. in 30-35 minutes. Check with a needle test.
8.) Take the finished muffins out of the forms while still hot and let them cool completely on a rack.
