Chives Gnocchi

INGREDIENTS:
- 1 kg of potatoes
- 2 eggs
- 30 dkg strudel flour
- 10 dkg wild onions
- 5 dkg butter
- Salt
PREPARATION:
1.) Cook the potatoes in their peel, peel them, and break them even hot with a potato press.
2.) While the potatoes are cooling, clean the shallots, rinse thoroughly, drain well and chop not too finely, and then sprinkle on the potatoes.
3.) Add 1 teaspoon of salt, eggs, flour, then knead soft dough out of it with quick movements.
4.) Cut the dough into 6 pieces and twist two fingers thick rods from each.
5.) Cut into 1-2 cm pieces and with a forkhead press small notches on the surface so it keeps the sauces better.
6.) Cook in boiling salted water. When they come up to the top of the water, cook for another 2-3 minutes and then drain it with a filter spoon.
7.) Heat the butter in a pan, throw in the drained noodles and fry for a few minutes.
