Salmon Tartare

Time: 45 minutes

INGREDIENTS:

  • Salmon tartar:
    • 20 dkg fresh salmon fillet (without skin and fat!)
    • 20 dkg smoked salmon
    • 1 shallot onion
    • 1/2 bouquet (package) chives
    • 3 tablespoon lemon olive oil
    • Salt
    • Pepper​
  • Salad:
    • 25 dkg cooked potatoes in the peel
    • 5 tablespoons vegetable stock
    • 15 dkg cucumber
    • 1 small avocado
    • 1-2 teaspoons mixed spice (eg parsley, tarragon, turmeric)
    • 10 dkg creme fraiche (sour cream)

 

PREPARATION:

1.) Peel the squash, grate it and cut it into small pieces.

2.) Chop the chives are (It works great with scissors!)

3.) Dice the fresh and smoked salmon with a sharp knife.

4.) In a bowl, mix the salmon, lettuce, chives, and lemon juice, olive oil, salt, and pepper. Cover with foil and cool it down.

5.) Peel the boiled potatoes, cut into small cubes and mix with the vegetable juice.

6.) Peel the cucumber, cut it in half and remove the seed with a small spoon.

7.) Cut the avocado in half, remove the seed, peel it and dice it together with the cucumber.

8.) Add the spices into the creme fraiche, then add the potatoes, avocado, and cucumber as well. Season with salt and pepper.

9.) Place a 6-7 cm diameter dessert ring (form) on a plate, fill it with two-thirds of the potato-cucumber salad, carefully squeezing.

10.) The remaining part is filled with salmon tartar, this is also pressed.

11.) Remove the ring carefully, wash and dry it and create further portions with it.
