Potato Salad With Mayonnaise

Time: 90 minutes

INGREDIENTS:

  • 1.5 kg of potatoes
  • 2 red onions
  • 1 onion​
  • For mayonnaise:
    • 3 eggs
    • 3 dl sunflower oil
    • 2 dl sour cream (20%)
    • 1 teaspoon mustard
    • Salt
    • Pepper
    • 1 tablespoon powdered sugar
    • Lemon juice from 1 lemon

 

PREPARATION:

1.) Boil the potatoes in their peel in salted water.

2.) Remove the peel while still warm and cut circles.

3.) Cut the purple and onions into thin slices.

4.) For the mayonnaise, mix the egg yolks with the mustard and sugar, and then add the oil slowly, almost dropwise, with constant stirring.

5.) Season with more salt, pepper, and lemon juice. When done, add the sour cream.

6.) Add the potatoes and mix carefully, don't crush the potatoes.

7.) Add the onions.

8.) If necessary, season it with salt and pepper afterward and let it rest in the fridge for a few hours.
