Spicy Sweet Potato Salad

Time: 80 minutes

INGREDIENTS:

  • 50 dkg sweet potatoes
  • 3 red onions
  • 5-6 cloves garlic
  • Black olives to taste (pitted)
  • About 0.5 dl of olive oil
  • 2 teaspoons honey
  • 1 teaspoon grated ginger
  • 1 teaspoon ground cumin ground
  • 1 bunch of parsley green
  • ½ orange juice
  • Salt
  • Pepper
  • Chili

 

PREPARATION:

1.) Peel the sweet potatoes and cut them into larger pieces.

2.) Cut the onions into slices.

3.) Place the potatoes with the garlic cloves and olives in a fireproof container.

4.) Mix the oil with honey, ginger, cumin, and chopped parsley.

5.) Squeeze the orange juice into it, then season with salt, pepper, and chili.

6.) Sprinkle the spicy oil on the vegetables. Bake in a preheated oven at 190 degrees for about 30 minutes, covered, and then without a lid for another 35-40 minutes.
