Salmon Broccoli Spaghetti

INGREDIENTS:

  • 120 g of wholemeal spaghetti
  • 2 tablespoons olive oil (approx. 25g)
  • 2 cloves garlic (about 10g)
  • 250 g salmon fillet without skin
  • 250 g broccoli (picked into small roses, almost without stems)
  • 100 ml of cream
  • 30 g of pecorino or Grana Padano cheese
  • Salt
  • Grounded black pepper
  • Grounded nutmeg

 

PREPARATION:

1.) Cook the pasta in salted water according to the instructions on the package.

2.) Fry the garlic in the olive oil, then if it starts to smell, we add cut salmon (cut into 2-2 cm cubes).

3.) Fry the salmon on moderate heat. You may want to use a Teflon pan to prevent the fish from sticking.

4.) When the salmon is nice pink on each side add the broccoli and cover it. Add a little water under it, approx. 1 dl.

5.) Simmer it until the broccoli softens, which is approx. 5-10 minutes. If necessary add more water.

6.) When the salmon is well cooked and the broccoli is softened, add the cream, season, and sprinkle with the cheese. It's enough to cook all together in 1-2 minutes.

7.) Serve it with pasta.
