Oatmeal Muffins

INGREDIENTS:

  • 50 g of gluten-free oatmeal
  • 50 g brown rice flour
  • 3 g gluten-free baking powder
  • 10 g * sweetener (1: 4)
  • 60 g forest fruit (frozen)
  • 1 medium-sized (M) egg
  • 1 dl of water
  • 7 g of coconut oil ​

 

PREPARATION:

1.) Unfreeze the frozen berries.
2.) Preheat the oven to 180 ° C.
3.) Mix the oatmeal, flour, sweetener, baking powder well thoroughly.
4.) Wash the eggs thoroughly, add them to the dry ingredients, then add the water and coconut oil.
5.) Mix the whole into a smooth mass and finally add the already unfrozen forest fruit.
6.) Put the dough into silicone muffin forms.
7.)  Bake at 180 ° C for approx. 15-20 minutes (needle test)​
