Vegan Chili Beans

INGREDIENTS:

  • 1 large onion - chopped
  • 2 cloves garlic - chopped
  • 50 dkg boiled beans (canned beans are also good)
  • 6 dl tomato juice
  • 1 tiny box of condensed tomatoes
  • 2 dl of water
  • 1 piece of paprika
  • 40 dkg of sweet corn
  • 1 bay leaf
  • 1 teaspoon unsweetened cocoa powder (or quite a few cubes of 60-70% dark chocolate - really don't miss)
  • ½ teaspoon cinnamon
  • 1 chili (or cayenne pepper)
  • Salt and pepper to taste
  • Little flour (about 1 tablespoon)
  • Sugar

 

PREPARATION:

1.) Sauté the onion in a little oil for 8-10 minutes on low heat; add the garlic in the last 2-3 minutes. Salt at the end.

2.) Add the flour and fry it a little bit. (No more than half a minute and on low heat; the flour burns easily.)

3.) Put the flame on medium, add the water, the condensed tomato, the tomato juice, and then the beans can come on the top.

4.) Add the chopped peppers, bay leaf, pepper, cocoa powder (or chocolate) and cook under low heat for approx. half an hour.

5.) Meanwhile, we taste it and, if necessary, season it and/or add sugar.

6.) Add the washed corn for the last 5 minutes.

7.) Serve with fresh tortillas, bread, or rice.
