Paleo Muffin

INGREDIENTS:

  • 3 eggs
  • 2 small apples, grated
  • 3 tablespoons melted coconut fat
  • 0.5 dl of water
  • 1 mocha spoon of baking soda
  • 50 g of erythritol
  • 3 tablespoons plantain peel
  • 4 tablespoons coconut flour

 

PREPARATION:

1.) Mix the eggs with the melted coconut fat, water, baking soda and grated apples.

2.) Add the erythritol, the plantain peel and finally the coconut flour.

3.) Mix thoroughly.

4.) If you have muffin shapes use them and add a little oil into the bottom and sides of the shape or if you do not have muffin shapes, use paper of muffins.

5.) Spoon the dough into the muffin shapes/papers.

6.) Place the muffin in a 180 degree oven (165 degrees in an air stirrer) and bake for approx. 30 minutes.

7.) Remove the apple muffins from the oven in the form for another 5 minutes, then let them cool on the baking sheet.
